And it was so easy to make...my kind of dish! A short list of ingredients too...have I talked you into making it yet? Well, okay then, on to the recipe!
Florentine Penne Pasta
Ingredients
- 12 oz whole wheat penne pasta, cooked according to package directions
- 2 small tomatoes, cubed
- 2 c baby spinach, or regular leaf spinach washed and chopped
- 4 oz light cream cheese, softened
- 3/4 c parmigiano & romano freshly ground blend
Directions
- Preheat oven to 350F
- In large bowl toss all ingredients together
- Put mixture into lightly greased casserole dish
- Cover with foil or lid and bake for 45 minutes
- Serve immediately
